Warm Beanshoot Salad

Ingredients Green Grocer Big handful of snow pea shoots (that’s shoots not sprouts, if you can’t get shoots, then substitute with a tough green like chard or silverbeet) roughly chopped. Dry Store Small handful of almonds roughly chopped 2 teaspoons red wine vinegar mixed with 1 tablespoon of water 1 tablespoon good olive oil pinch salt Method
  • Toast the almonds in a dry frypan and put aside.
  • Add olive oil to the pan but don’t let it get too hot.
  • Throw in the snow pea shoots and toss quickly until wilted.
  • Add the vinegar and water, salt and almonds.
  • Toss through and serve.

Fluffy Zucchini Fritters

Makes 6-8 fritters which will feed 2 hungry people. Ingredients Green Grocer 2 Zucchini grated 1 tablespoon chopped parsley Dry Store 1 whole egg 2 tablespoons SR flour 2 tablespoons grated cheese salt to taste oil for frying Method
  • Mix all ingredients (except oil) in a bowl and let stand for 15 minutes.
  • Heat the oil in a frypan and spoon mixture into hot oil.
  • Cook over a medium heat until bubbles appear in the top (3-5 minutes).
  • Flip and cook until you can touch the top and it springs back slightly (3-5 minutes).
  • Serve with warm beanshoot salad.
